Easy Apple Crisp

Hot and spicy, sweet and delicious apple crisp.  It can be easy, nutritious, and gluten free!  This recipe is also egg free, dairy free, and very very satisfying.
Preheat oven to 350F
9x9" square baking pan - 1 recipe
9x12" baking pan - 1 1/2 recipe

Apple Filling:
6 sliced apples (Granny Smith for tartness, or Gala for Sweeter)
1 1/2 cup boiling water
2 tsp cornstarch mixed thoroughly into cold water
2 tsp pumpkin pie spice
1 tsp cinnamon
1 1/2 tsp fresh lemon juice
2 tbsp brown sugar
Put apples in water, and bring to medium boil. Stew apples until softened.
** while waiting for apples to stew, begin the crisp topping (see below)**

When water is at a medium boil, make a well in the middle of apple mixture, gently stir in cornstarch mixture into the well.  Continue medium boil until mixture thickens 

Remove apples from heat.  Add in pumpkin pie spice, cinnamon, lemon juice, brown sugar.
Pour apple mixture into the baking pan


Crisp Topping:

1 1/2 cups gluten free oats
2 tbsp brown sugar
2 tsp cinnamon

Mix the ingredients thoroughly.  Sprinkle onto apple mixture in pan.
Bake for 25 minutes, or until golden brown on top.
